Amazing salad for summertime and for those Mondays when you feel like you need a minor detoxifying cleanse.
Salad:
-Romaine
-Shallots
Zucchini Slaw
-TBS lemon juice
-TSP oregano
-TSP Cilantro
–> In a skillet, saute the zucchini(julienned) in a dash of oil. Add herbs and lemon juice and allow to cool fully before adding to the salad.
Dressing:
-TSP dill
-1 cup of greek yogurt
-1/2 sliced cucumber
-1 TSP of fresh garlic
-1 TBSP of lime juice
–> combine in food processor
I topped my salad with feta cheese ๐
What a beautiful day to start this fitness bloggin’! ย I hope everyone had the amazing June weather that I had here in Maryland. Not only was the weather perfect, I also got to enjoy the outdoors whilst exercising. Today was all about ME and doing what makes me smile, which is being outdoors in the sun!
